Richard Funk of Saviah Cellars in Walla Walla shows delicious consistency with his second label, and The Jack lineup reflects his deep relationship with some of Washington state's top growers outside of the Walla Walla Valley. For this Cab, they include Bacchus, Elephant Mountain, Lonesome Springs Ranch and Stillwater Creek vineyards. This bottling, labeled legally as Cabernet Sauvignon (77%) reflects Funk's deft blending talents even further by including juicy Malbec, gracefully herbal Cabernet Franc and bold Merlot. Aromas of blueberry, vanilla and shortbread cookie lead to flavors of plum, cherry and cocoa powder, backed by cherry tomato acidity and beveled tannins for a medium body. It received a unanimous double gold medal at the 2018 Washington State Wine Competition, which also serves as a scholarship fundraiser for Yakima Valley Vintners, the winemaking program for Yakima Valley College.

Food pairings: The nicely rounded tannins of The Jack Cab don't scream for well-marbled meats, so enjoy with leaner cuts such as London Broil, short ribs, New York strip, lamb chops or venison.
The Saviah Cellars tasting room near the Washington/Oregon border is open daily, and there is a $10 tasting fee that gets waived with a wine purchase.
